Because of Greece's less-than-fertile terrain, most of its cheeses are made from sheep's milk. Feta is, of course, the best-known Greek cheese, but fresh sheep's milk cheeses are common, as well. One of the most common of these ricotta-style cheeses is Myzithra. It has a much more interesting flavor and texture than most of the ricotta available in this country. The flavor is rather nutty, and the texture is cottony and drier than ricotta. This cheese works wonderfully in cooking, especially blended into pasta dishes. Our version of Myzithra is actually the pressed and dried version. It is similar to an Italian ricotta salata and is a popular grating cheese in Greece. The cheese is quite crumbly and salty, so a little bit can add a lot of flavor to your dishes.

Myzithra is hard to find in the area where we live. We love this cheese and use it to replicate the Spaghetti Factory's Myzithra in browned butter. I have made this recipe many times and have always had rave reviews. I have been told it tastes exactly like the restaurants. My grandson's who are seven and nine ask me to make this dish for them.
Myzithra is a good hard cheese that is easily grated or shredded and I use it in many other recipes because of its interesting flavor.

I haven't bought this specific cheese from igourmet, although I have bought others. I will vouch for Myzithra in general, a local grocery store to me stocks it fairly often, and based on the description here it's about the same. Makes a wonderful cheese for pasta, it does grate well, but it melts quite well actually. I'm far from a chef, I just try out things and experiment until I get something I like personally, but I would say this is a cheese to try.
I bought this for my Mom when she couldn't find it for a recipe. Apparently I went overboard by buying two pounds, but it seems to freeze well. The whole town has had some by now! Versatile with many recipes, can be inserted for mozzerella, romano, parmasean and feta ... it only takes imagination. Great twist to recipes!

I bought this to try to make the Old Spaghetti Factory Myzithra browned butter a la Homer which is my favorite. Ok I'm not a pro chef, but I think I did pretty well but it still did not quite taste as delicious as the restaurant. I'm sticking with the restaurant!
